Polish invention changed the pork – Pulse of Business

The Polish food exports for years beating new records. In the past year, despite the Russian embargo had exceeded 20 billion. Technology of production and processing of pork functional, developed at the Department of Human Nutrition and Consumer SGGW (WAU) and the Institute of Genetics and Animal Breeding in Jastrzębiec, has a chance to change it. Has already won numerous awards at the World Exhibition of Innovation in Brussels.

– Meat is to provide as many minerals, vitamins, proteins, and the least saturated fat or allergenic substances. We have developed technologies ensure that meat and products are about 40 percent. less calories, they have half the salt, contain and additional antioxidants and more unsaturated fats [beneficial for the body - ed.] at the expense of unsaturated. So we get about the qualities of healthy food – said prof. Agnieszka Wierzbicka, współkierująca Biożywność project, which has developed and implemented a meat technology.

The project is entering a phase of commercialization. Scientists want to farmers free to share technology and processing factory, to facilitate widespread deployment in the meat industry. © Ⓟ
